Strawberry Feta Almond Salad
This is a favorite in my home and I give my husband all the credit. He came up with it years ago, and come summer, when the strawberries are at their peak, this salad is our go to. He even picked out the Trader Joe’s Pear Gorgonzola vinaigrette that goes great with it. If you can’t find it, I encourage another dressing with some sweetness, like a raspberry vinaigrette or Poppyseed.
And while you can certainly use any kind of lettuce you prefer, I’m a big fan of butter lettuce, for how soft and buttery it is; hence the name.
Great for summer, easy to prep, and tasty. The salty, sweet, and nutty are a great combination of flavors, and you can add some protein to make this more into a meal.
Strawberry Feta Almond Salad
Makes two entree sized salads
1 head of butter lettuce, rinsed and dried
1 cup of strawberries, sliced
1/4 small red onion, sliced very thin
1/2 cup Feta handful of toasted, slivered almonds
Trader Joe’s Pear Gorgonzola dressing
Toss all of the ingredients together and get ready for delicious!
